Pie Oh My recipe finally..

As promised, here is the pie recipe finally..well as much as a recipe as I can give you. I am a huge believer in approximation when it comes to cooking. And yes sometimes it doesn't work out as well as last time but that's just all part of the fun!

Ingredients:

Enough pie pastry, homemade or not (I wont tell)
8 large apples cored and sliced (whatever firm type you have)
1/4 cup brown sugar
2 tablespoons white sugar
2 tablespoons plain flour
Pumpkin pie spice
For the crumble:
1 cup rolled oats
1/4 cup sugar
1/2 cup melted butter
1/4 cup crushed almonds
1/4 cup plain flour


Mix apples with flour, brown and white sugar and spice and sit to allow juices to be absorbed.
Roll out pastry for pie bottom and line a greased pie tray.
In a separate bowl combine ingredients for crumble and set aside.

Assemble pie by piling apple mixture over pastry and bake without the crumble until pastry is cooked and apples are tender (roughly 20 minutes). Take pie out of the over and gently pile crumble mix on top being careful not to press down too firmly.Bake again until crumble is brown on top. Take out and cool before serving. Enjoy!
